Aumento do consumo de leite e derivados puxa mercado de caprinos e ovinos

O mercado de leite de caprinos e ovinos cresceu 30% no último ano. O aumento do consumo de leite e derivados é apontado com um fator deste crescimento. Quem está a mais tempo na atividade está conseguindo investir no negócio agora.

Faz 20 anos que Pedro Paulo Vasconcelos cria cabras de leite. Uma das que ele trouxe para expor na 8ª Feira Internacional de Caprinos e Ovinos (Feinco), que ocorre esta semana em São Paulo, dá cinco litros de leite por dia. A média no Brasil é de até três litros. A boa produtividade é resultado de investimentos em genética, diz ele. Com maior consumo, investir ficou mais fácil.

– Muitas prefeituras têm comprado leite de cabra, e empresas estão investindo e acreditando na atividade – afirma Vasconcelos.

Há um ano, o criador Carlos Schmidt resolveu investir na produção de queijos finos. Ele tem criação de ovelhas da raça east-friesen, de origem alemã, numa fazenda em Campos do Jordão, em São Paulo. E é lá que faz, de forma artesanal, o queijo de pastor. Um quilo do produto custa R$ 300. E ele não dá conta de atender aos pedidos.

– Não existe chefe de cozinha que não queira um produto como este no seu cardápio – afirma Carlos.

O mercado tende a concentração, diz o especialista Sebastião Faria. Com isso, diminui o sistema de produção verticalizada, onde o criador também beneficia e vende o produto.

– Isso fortalece o mercado – garante o especialista.

Tem muita gente interessada neste negócio. Interessada e legalizada. No Estado de Minas Gerais, que é uma referência na produção leiteira no Brasil, foi assinado no ano passado uma portaria que legaliza a comercialização do leite. Uma garantia pra quem está neste mercado que, além de ter demanda de consumo, paga bem. O litro de leite de cabra rende no bolso do produtor até 40% mais do que o leite de vaca.

O que acontece ainda, diz Aurora Gouveia, presidente da Associação de Criadores de Minas (Caprileite), é que precisa reduzir os custos. A portaria assinada no Estado pretende criar uma legislação específica para o setor. A que existe hoje é a mesma da produção de leite de vacas.

– Isso vai estimular a criação e que o produtor pode dizer aí sim que é legal na atividade – afirma a presidente.
