Agropacto debate valorização do queijo artesanal no Ceará

O encontro ocorrerá na sede da Embrapa Agroindústria Tropical, onde é desenvolvido um projeto que visa a obtenção da indicação geográfica do queijo coalho produzido na região de Jaguaribe/CE.

A coordenadora do projeto, pesquisadora Socorro Bastos, será uma das palestrantes do encontro. Segundo ela, a exigência de pasteurização do leite pela atual regulamentação do Ministério da Agricultura, Pecuária e Abastecimento, é uma ameaça para os queijos artesanais, produzidos com leite cru. “A pasteurização muda as características do queijo”, explica.

A pesquisadora Socorro Bastos completa que estudos têm demonstrado que entre os atributos mais importantes para a segurança do queijo estão as Boas Práticas Agropecuárias (BPA) e de Fabricação (BPF). Quando a produção não segue as BPAs, mesmo com o leite pasteurizado, podem surgir problemas em relação à segurança microbiológica. "Os queijos franceses e portugueses são produzidos com leite cru, mas a produção é baseada nas Boas Práticas", completa.

Alguns estados brasileiros têm legislação para regulamentar a produção de queijo artesanal, como Pernambuco, Rio Grande do Sul, Rio Grande do Norte, Santa Catarina e Minas Gerais. Dessa forma, o produto pode obter registro para comercialização no estado, mesmo com a produção artesanal, dispensando a pasteurização do leite. Nos estados da Paraíba, Sergipe e Ceará existem grupos de discussão sobre novas legislações estaduais que garantam a preservação dos tradicionais queijos das regiões.
